In homage to my father Xavier de Bournet, Architect and Winemaker, I have crafted this wine according to his principles and his concern to "always find the right balance in everything".
Le Nombre d'Or is made from hand-harvested grapes, followed by carbonic maceration and fermentation without the addition of yeast. The free-run juice is kept separate from the press wine. The press wine completes its alcoholic fermentation in oak barrels. Both the free-run juice and the press wine are then aged for over 18 months in oak barrels. After this aging period, they are blended for bottling.
Grape variety: 100% Syrah.
This vintage pairs beautifully with refined dishes such as red meats and game. Decant before serving!
